You're right, a lot of the traditions and understandings that Maori had about life were never written down anywhere, unlike the Europeans (who wrote down EVERYTHING). This means that the memories that Maori (and other Polynesian peoples) had must have been incredibly powerful.It would be fascinating to be able to have a conversation with someone who was alive back then so they could teach us more.
